Zeana Sue's Green Chile Burritos
8 lbs. of hamburger (ground chicken, turkey, or vegetables-- your
choice)
1 large onion, diced
2 tsp. garlic powder (or to taste; I use granulated garlic from
the bulk food section)
6 T. flour
4 4oz. cans diced green chilies
2 small cans of tomato sauce
1 large can diced tomatoes, drained
Add chili powder, taco seasoning or whatever to taste
Optional: To finish the burros enchilada style
2 cans enchilada sauce
grated cheese
Fry hamburger, onion and garlic powder until browned. Drain off most
of the fat. Add flour a tablespoon at a time and mix, until all fat is absorbed.
Place mixture in a large dutch oven and add tomato sauce, tomatoes, green
chilies. Cook over medium heat until bubbling, then reduce heat to simmer,
stirring occasionally for about 20 minutes.
For plain burros, heat flour tortillas and place mixture in the middle
of each and roll. For enchilada style, spoon mixture onto large flour tortillas,
fold ends and sides over, place on a cookie sheet. Brush the rolls with
enchilada sauce and sprinkle with cheese. Place under the broiler until
the cheese melts.
Top with your favorites: diced fresh tomatoes, green onions, sliced olives,
sour cream, guacamole... whatever suits your taste! Enjoy!
Makes a bunch! Is also good over rice or noodles. Freezes well (divide
into meal-sized portions to make defrosting easier). Recipe can be cut in
half.
