Lemon Brocolli Chicken

(recipe sized for a KitchenAid mixer - fractionalize at will)

 

I had a few to choose from, but with summer here, this one is quick and easy. I just hope all those silly beaders that like raw soup out of the can don't eat the soup before making this!! Hmmmm.... maybe I better mention that! Anyhow, here goes... ~Katie

 

 

 

1 lemon

1 tbsp. vegetable oil (I use olive oil for everything)

4 skinless, boneless chicken breasts

1 can ( 10 3/4 oz.) Campbell's Cream of Broccoli soup

(for those that like raw soup, get 2 cans so you can eat one while cooking)

1/4 cup milk

1/8 tsp. pepper

 

1.) Cut 4 thin lemon slices; squeeze juice from remaing lemon. Set aside.

2.) In skillet, in hot oil, cook chicken for 10 min. or untol browned. Remove; set aside. Spoon off fat.

3.) In skillet, combine soup, milk, reserved lemon juice* and pepper. Heat to boiling. Return chicken to skillet; top with lemon slices.

4.) Cover; cook over low heat 5 min. or until chicken is no longer pink, stirring often. Garnish with fresh thyme if desired.

*Add more lemon juice to taste if desired.

Serves 4 (NO WAY!!!)

I usually serve this with a pasta side dish and salad I think it's Lipton that has a great herb and garlic pasta, but any to your liking will be great. YUMMY!!! Hope you all enjoy this as much as we do, a quick and easy dinner so you can get back to those beads.
